Eat Well: Padron Peppers

My husband has been on a jalapeño kick for about a year now. In his opinion, most of your everyday foods - eggs in particular - are made better by the presence of jalapeños. Not surprisingly, when we were at the farmer's market a few weekends ago, these little guys caught his eye. Our already strong love of peppers + the strong recommendation of the woman in front of us in line convinced us to buy a basket of the padrons (padrones?) to take home and try out.

And man - I am so glad we did. Like it says on the sign, this snack is delicious, not to mention easy (and healthy!). A little heat, a little salt, a little olive oil, and you have yourself a very tasty Sunday afternoon snack. Of course, the last time we whipped these up I couldn't resist pairing them with the salty crunch of potato chips, which turned into a rather unhealthy dinner...

Directions:

Drizzle with olive oil and salt to taste. Cook in a skillet over medium heat for about five minutes, until the peppers are crisp and start to blacken. Serve in a bowl and enjoy!
